Below are models of the stainless steel kitchen knives that I offer by order. I use maple for handles,and it has a simple boiled linseed oil finish. Practical & traditional. If you order two now,and more later,the maple will match. Also,you can easily maintain the boiled linseed oil sealer finish. My custom maple handle feels great in hand, very comfortable to use & good looking.

The chef is 13" OAL with 8" of cutting edge. 3/32" thick $110.
The fillet is 11-1/2" OAL with 6" of cutting edge 1/16" thick. A little flex towards the tip,but I do not consider this a flexible fillet. $95.
Stiff 6" boning knife is 11-1/4" OAL with 5-1/2" of cutting edge 3/32" thick $90.
This knife is a cook's utility. It also can be used as a steak knife at the dinner table. Also can be used as a larger paring knife. 7-7/8" OAL with 4" of cutting edge. 1/16" thick $65.
Paring knife is 6-7/8" OAL with 3" of cutting edge. Thinner stock than the cook's utility $60.
